Makes 12-14 bars
Ingredients:
100g butter
125ml Staffords Pure Honey
2 Tbsp brown sugar
280g muesli of choice
50g dried cranberries
50g raisins
40g dried mango
70g desiccated coconut
30g almonds or nut of choice
30g sunflower seeds
30g sesame seeds
50g wholewheat flour
1 large free-range egg
Method:
Preheat oven to 180˚C.
Grease and line a 22cm x 22cm baking tin with baking paper.
In a small saucepan over medium heat, melt the butter, honey, and brown sugar together.
Stir constantly until sugar has dissolved.
Combine the rest of the ingredients in a large mixing bowl.
Scatter over the flour and mix in the egg.
Pour the hot honey mixture over everything and mix well.
Spoon the mixture into the prepared baking tin.
Use an offset spatula or the back of a spoon to smooth the mixture down evenly.
Bake for 15 minutes until lightly golden and firm.
Allow to cool in the tin and then transfer to a wire rack to cool completely.
Slice down the middle and then into bars.
Keep in an airtight container ready for school lunches and snacks!
